This term, the Year 11 Food Science and Technology students experienced all the joys that local Western Australian produce has to offer. During an all-day food trail through the Swan Valley region, the students explored local food production and processing, tasting their way through roasteries, apiaries, orchards and more.

The tour kicked off with a speciality coffee tasting and roasting demonstration at the Yahava KoffeeWorks headquarters. Feeling energised, the students satisfied their sweet tooth at the Margaret River Chocolate Factory. Students observed a variety of processing techniques here and at the nearby Providore and Maison Saint-Honoré storefronts. From there, students followed the “bee-highway” to the Windarra Honey apiaries where they came face-to-antenna with the bees and tasted honey and honey products made from a range of native flowers.

The Swan Valley Sisters generously facilitated an in-depth exploration of organic fruit and vegetable production and processing, opening their shopfront and orchards to the students to harvest and taste the abundance this region has to offer. The students concluded the tour at the Maalinup Aboriginal Gallery where they were taken on a bush tucker journey, from emu eggs to native herbs.

Inspired by this wonderful experience, the students look forward to creating a dish that truly celebrates local foods.
